This corn pudding is definitely comfort food with a nice bite.
Ingredients
1 can cream style corn
1 cup yellow cornmeal
2 sticks melted butter (16 tbsp)
3/4 cup buttermilk
2 medium onions chopped
2 eggs beaten
1/2 tbsp baking soda
4 ounces sharp cheddar cheese
5 slices American cheese
3 jalapeno pepper sliced or minced fine
Directions
Preheat oven to 350 degrees; grease a 12x8x2 baking dish or a 9 inch square. Combine all ingredients except the cheese and pepper. Turn half the batter into the pan; then cover evenly with the grated cheddar cheese, then the sliced cheese and then the pepper. Top with the remaining batter. Bake one hour; cooling 15 minutes before serving.
