Fig bars are bar cookies that contain figs. Each fig bar is square-shaped with a baked cookie dough outer crust and a thick fig filling inside. The Fig Newton® commercial fig bars by Nabisco started many other companies manufacturing similar cookies. The Fig Newton® was invented by American, Charles M. Roser, in 1891. With this recipe, Fig Bars can be baked at home.
Ingredients
- 1/2 stick butter
 - 1 cup sugar
 - 2 eggs
 - 1 tsp vanilla
 - 2 1/2 cups sifted flour
 - 1/4 tsp baking soda
 - 1/2 tsp salt
 - 1 pint fig preserves
 
Directions
Step 1
Cream .butter and sugar until light and fluffy:
Step 2
Beat in eggs one at a time; add vanilla.
Step 3
Blend in sifted dry ingredients
Step 4
Chill dough in·refrigerator until firm.
Step 5
Divide dough In half and roll one half between two sheets of waxed paper into a rectangle shape. 11x15 inches. Place dough on cookie sheet.
Step 6
Cover with preserves which have been lightly mashed with the syrup.
Step 7
Moisten edges of dough with water and cover with remaining half of dough rolled into rectangular shape; seal edges.
Step 8
Bake in 400,degree oven for 20 minutes or until golden brown. Immediately cut into bars - Cool on cake rack. Makes 3 dozens
