Fresh tomatoes or not – Make this once, you will make again
This dish is so good and so easy to prepare.
You can even drink the juice – do you?
Ingredients
- 1/2 tsp black pepper
 - 1/4 tsp thyme
 - 1/4 tsp oregano
 - 3/4 tsp salt
 - 3 - 4 stems of green onion (onion tops), chopped
 - 1/4 cup chopped parsley
 - 1/3 cup canola oil
 - 1/4 cup red wine vinegar
 - 1/4 tsp garlic powder
 - 6 medium tomatoes, quartered or sliced
 - 1 medium sweet onion, sliced
 
Directions
Step 1
In a shallow dish with a cover, combine all the ingredients except the onions and tomatoes. Stir well, then add the tomatoes and onions to the mixture and cover. Refrigerate anywhere from 1 hour to overnight.
Step 2
When serving you could add additional tomatoes (optional) and garnish with avocados.
