Have more cucumbers than you know what to do with? And not much time to pickle? Try this easy no cook pickled cucumbers. Reminds me of the day, Momma would cut and serve up fresh cucumbers with vinegar, salt and black pepper sprinkled straight on.
Ingredients
Cucumbers
Vinegar
Water
2 tbsp Cajun Seasoning per quart jar
Salt t and black pepper to taste
Directions
Slice cucumbers with peelings into 1/4 inch slices. Place into a quart jar and add a mixture of 1/2 vinegar and 1/2 water into the jar.
Easy on the salt as this may cause some wilting of the cucumbers. If you like it spicy adding fresh tobasco peppers (I have also used pickled tobasco peppers in lieu of fresh)) or jalapeno peppers to the jar. Seal, set for a couple of days and then enjoy.
