Vee’s Meatloaf



  • 1 lb ground round
  • 1 bell pepper, chopped
  • 1-2 cups seasoned salad croutons (see directions)
  • 2 tsp salt
  • 1 egg
  • 1 onion, chopped fine
  • 1/4 tsp cayenne pepper
  • 1/2 cup milk
  • 6 oz sliced bacon
  • 3 jalapenos, diced (optional)
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tbsp horseradish (optional)


Step 1

Using seasoned salad croutons, crumble to form ¾ cup of breadcrumbs.

Step 2

Mix all the ingredients together (jalapenos, Worcestershire and horseradish optional). Shape into a loaf and cover the top and sides of the loaf with bacon slices.

Step 3

In a shallow baking pan, bake at 350 degrees for 45 minutes.
