Southern Potatoes (White) Casserole

Mouth watering hearty potato casserole!

Ingredients

  • 3 - 4 lbs new or small potatoes
  • 1 large onion, chopped
  • 1 lb bacon
  • 2 cups Monterey Jack Shredded Cheese
  • 1 cup Miracle Whip
  • 1/2 cup sugar (optional)
  • 1 hot pepper (optional)
  • 1/4 tsp salt
  • 1 tsp black pepper

Directions

Step 1

Boil potatoes in their jackets until done. Drain and set aside.

Step 2

Fry bacon until crispy and drain on paper towels.

Step 3

Quarter potatoes and add to a bowl along with crumbled bacon, miracle whip, 1 cup cheese, chopped onion, salt & pepper and sugar. Stir ingredients until mixed well.

Step 4

Spoon into a greased baking dish. Top with remaining cheese.

Step 5

Bake for 15 to 20 min in a 400 degree oven until hot and bubbly. Do not brown cheese.

This goes well with Fried Chicken, pork chops and beans and cornbread.
