Ingredients
- 1 (29 oz) can cut sweet potatoes
- 1/2 cup orange juice
- 1/2 cup sugar
- 1/2 cup grated coconut
- 1 (16 oz) package marshmallows
Directions
Step 1
Drain the syrup from the sweet potatoes, reserving ½ cup of syrup. In a casserole dish, combine sweet potatoes, orange juice, the reserved syrup, sugar, and coconut.
Step 2
Bake for 30 minutes at 300 degrees. Top with marshmallows and return to the oven for another 5 minutes or until brown.
