Ms. Linda’s Crawfish Etouffee (Etoufee)

Ingredients

  • 1 lb peeled crawfish tails
  • 1 (10 oz) can Rotel tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 stalk of celery, chopped
  • 1 stick butter
  • 2 cups water

Directions

Step 1

In a large pan, cook vegetables in butter until soft. Add the can of Rotel and simmer until all the water from the can has evaporated.

Step 2

Add crawfish and water. Cook over medium heat for about 15 to 20 minutes (until a thick gravy forms). Serve over cooked rice.
