Bonita Hopkins’ Shrimp or Crawfish Opelousas

Quick and easy Cajun Dish. Cooked in one easy step right in your rice cooker.

Ingredients

  • 1 lb Shrimp or Crawfish
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 small bunch each green onion tops & parsley
  • 1 1/2 cups washed rice
  • 1 ½ cups water
  • 1 (14 oz) can Campbell's Beef Broth
  • 1 (4 oz) can sliced mushrooms, drained
  • 1 stick margarine

Directions

Step 1

Mix all together and season to taste. In a rice cooker, add rice, water and mixed ingredients.

Step 2

Cook in the rice cooker for 35-45 minutes. Do not open or stir.

Optionally, you can also add 1/2 pound crab meat to the mixture.
