Marinated Onions and Tomato Wedges

Fresh tomatoes or not – Make this once, you will make again
This dish is so good and so easy to prepare.
You can even drink the juice – do you?

Ingredients

  • 1/2 tsp black pepper
  • 1/4 tsp thyme
  • 1/4 tsp oregano
  • 3/4 tsp salt
  • 3 - 4 stems of green onion (onion tops), chopped
  • 1/4 cup chopped parsley
  • 1/3 cup canola oil
  • 1/4 cup red wine vinegar
  • 1/4 tsp garlic powder
  • 6 medium tomatoes, quartered or sliced
  • 1 medium sweet onion, sliced

Directions

Step 1

In a shallow dish with a cover, combine all the ingredients except the onions and tomatoes. Stir well, then add the tomatoes and onions to the mixture and cover. Refrigerate anywhere from 1 hour to overnight.

Step 2

When serving you could add additional tomatoes (optional) and garnish with avocados. Works well with baked turkey and steamed carrots.
