Ice Box Cookies

Ingredients

  • 4 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1 cup brown sugar
  • 3 eggs
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 1/2 cups shortening
  • 1 cup white sugar
  • 1 cup pecans, chopped

Directions

Step 1

Cream sugar and shortening. Sift together the dry ingredients and add to the creamed mixture. Add the eggs, then the rest of the ingredients.

Step 2

Roll the dough in wax paper in a cylindrical tube – it will look like the slice and bake cookies you can buy at the grocery store.

Step 3

Refrigerate overnight.

Step 4

Slice and bake the cookies at 350 degrees for 13-15 minutes or until they are just getting a little brown around the edges. Enjoy!
