This is a nice way to spruce up your breakfast.

Ingredients

  • 2 tbsp margarine or butter
  • 2 tbsp packed brown sugar
  • 1/4 tsp ground cinnamon
  • 1 medium apple, thinly sliced
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/2 cup milk
  • 1/4 tsp salt

Directions

Step 1

Preheat oven to 400 degrees.

Step 2

Melt margarine and pour in the bottom of a 9 inch pie plate in the oven. Sprinkle brown sugar and cinnamon over margarine. Put apple slices on top of the cinnamon sugar mixture.

Step 3

Beat eggs slightly in a medium bowl with a wire whisk. Mix in other ingredients, do not overbeat.

Step 4

Pour batter over apple slices. Bake 30 to 35 minutes or until puffy and deep golden brown. Immediately loosen the edge of the pancake and turn upside down onto a serving plate.
