Creole Green Beans

Green beans also known as string beans or pole beans are a popular vegetables among the Cajun culture. Try this dish for some variety.

Ingredients

  • 6 slices bacon, crisply fried
  • 3/4 cup onion
  • 1/2 cup bell pepper, chopped
  • 2 tbsp flour
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp dry mustard
  • 1 can 16 oz peeled tomatoes
  • 1 can 16 oz green beans

Directions

Step 1

In the same skillet that you browned the bacon keep 3 tablespoons of drippings and add the onion and green pepper. Sauté until tender.

Step 2

Blend in the flour, sugar, Worcestershire sauce, salt, pepper and mustard. Add the tomatoes. Cook over medium heat stirring constantly until thick.

Step 3

Add the green beans and heat thoroughly. Garnish with bacon and serve.
