Chocolate Covered Pecans

Here is a fun fact from ilovepecans.org – you imagine a pecan skyscraper? It would take 11,624 pecans, stacked end to end, to reach the top of the Empire State Building in New York City. Kinda glad it only takes 2 cups for this pecan treat. Makes a sweet Christmas gift.

Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 3 tbsp heavy cream
  • 1/4 tsp vanilla
  • 2 cups pecan halves

Directions

Step 1

Roast pecans for two minutes in a microwave; stirring once during the process. Set aside.

Step 2

Combine the chocolate chips and cream in a double boiler. Stir until melted and smooth. Add vanilla and remove from heat.

Step 3

Stir pecan halves into the chocolate until completely coated.

Step 4

Remove a few pecans at a time with a slotted spoon. Separate pecan halves and place onto a waxed paper lined cookie sheet or parchment paper.

Step 5

Refrigerate for 10 minutes to set. Change the pace and add a dash of cinnamon.
