Sweet Potato Casserole II (Praline Topping)

One of the best tasting sweet potatoes casseroles. A side dish so good, it could be dessert.

Ingredients

  • 3 cups cooked and mashed sweet potatoes
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 stick butter
  • 2 eggs
  • 1 cup granulated sugar
  • 1/2 cup milk (regular or evaporated)
  • 1 cup brown sugar (light or dark)
  • 1/2 cup pecans or walnuts, chopped
  • 1/2 stick butter, melted
  • 1/3 cup flour
  • 1 cup marshmallows (optional)

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

For casserole filling: In a large glass bowl combine the potatoes, salt, vanilla, butter, eggs, granulated sugar and milk. Pour evenly into a 13x9 casserole dish.

Step 3

For the nut topping: Mix together the brown sugar, nuts, melted butter and flour. Top the potato casserole and bake 350 for 30 minutes.

Step 4

You can top with marshmallows in the last 5 minutes of cooking.
