Sweet Potato Casserole I

This recipe is from my best friend Lucille. Great for the holidays.

Ingredients

  • 3 cups Cooked Fresh Sweet Potatoes
  • 1 stick butter
  • 2/3 cup white sugar
  • 1 tsp vanilla
  • 2 eggs beaten
  • Topping
  • 2/3 cup brown sugar
  • 1 stick butter, softened
  • 1/2 cup flour
  • 1 cup chopped pecans

Directions

Step 1

Mix first half of recipe ingredients (potatoes, butter, sugar, eggs and vanilla) and pour into a greased 9x9 casserole dish.

Step 2

Mix together the rest of the ingredients for the topping. Spread evenly on the top of the casserole.

Step 3

Bake at 400 degrees for 40 minutes.
