Strawberry Fig Jam

One of the more popular fig preserves recipes – The jello reduces the cooktime substanially over regular fig jam and allows the jam to set.

Ingredients

  • 6 cups mashed/pureed fresh figs
  • 6 cups granualted sugar
  • 1/2 medium lemon sliced
  • 4 - 3oz boxes or 2 - 6oz strawberry jello

Directions

Step 1

Mash or puree six cups of fresh figs

Step 2

Mix the figs, lemon, sugar, and strawberry powder in a magnalite or heavy duty pot.

Step 3

Cook slow on medium heat until mixture starts to boil.

Step 4

Boil for 10 to 15 minutes; pour into sterilzed glass jars Either eat the carmelized lemon or scan with figs.

Step 5

Process in a hot water bath for 15 minutes.

Step 6

Serve on toast, hot biscuts or on cream cheese as a dip with crackers.
