Simple Sweet Potato Pie

A simple recipe to make a classic Southern dessert. Simply Perfect and Simply Delicious

Ingredients

  • 1 (9 inch) unbaked pie shell
  • 2 cups mashed sweet potatoes- one pound baked - 40 oz can drained
  • 2 eggs, slightly beaten
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1 tsp vanilla
  • 1 2/3 cup light cream or evaporated milk
  • 1/2 cup butter, melted

Directions

Step 1

Bake the sweet potatoes until tender. Peel and mash. Or drain can of sweet potatoes and mash.

Step 2

Mix the remaining ingredients (except the pie shell) together with the sweet potatoes. Pour into the pie shell.

Step 3

Bake at 400 degrees for 50 minutes until a knife inserted one inch from the edge comes out clean.
