Shrimp Rice ala Mexi-Cajun

This dish is very fast and really tasty. It is a dish for the whole family. I serve it with garlic bread and a green salad.

Ingredients

  • 1 pound large shrimp
  • 1/2 stick butter
  • fresh garlic to your taste
  • 1/2 cup chopped red, yellow, and green bell peppers
  • 1/2 cup parsley
  • 1/2 cup chopped onions
  • 1 can Mexican Rotel
  • 1 can cream of shrimp
  • 1 cup half and half
  • 1 cup whole style corn
  • 1 can black beans optional
  • 6 cups cooked rice

Directions

Step 1

In a large saucepan add shrimp and butter with all the seasonings, then sauté for 10 minutes.

Step 2

Add the Rotel, cream of shrimp, half and half, corn and black beans.

Step 3

Cook for 20 minutes. Mix with rice and serve.
