Seafood Surprise

Enjoy this fun information on LA seafood: in a blind taste test, consumers chose Louisiana oysters over others sold in the US 85% of the time. Cajuns will chose it 100% of the time. Fried Oyster or Fried Shrimp compliment this dish.

Ingredients

  • 1 stick butter
  • 1 medium onion minced
  • 3 cloves garlic minced
  • 2 cans artichoke hearts
  • 2 cans French style beans
  • 1/2 cup Parmesan cheese
  • 1 can mushrooms (fresh may be used)
  • 1 1/4 cup breadcrumbs
  • 1 can golden mushroom soup
  • 1 pound to 2 pounds cooked fish or combination of shrimp and crab meat. Also very good with chicken

Directions

Step 1

In a medium saucepan, sauté onions and garlic in melted butter. Add the artichoke hearts and green beans. Sauté a few minutes then add the cheese, mushrooms, breadcrumbs and soup. Stir well until heated throughout.

Step 2

Season with salt and red pepper, add seafood and gently mix (can be frozen at this point for later use).

Step 3

Bake in a 3 quart dish for 10 minutes for 350°.

Drain the beans and keep the juice to be added later if needed.
