Sawdust Pie

This pie is more traditional Kentucky but several Cajuns have taken a liking to it. Granmere would be real proud of this one. Try adding a half cup of raisins or chocolate chips for a nice difference.

Ingredients

  • 1 (9 inch) pie crust
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups shredded coconut
  • 1 1/2 cups sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 cup egg whites

Directions

Step 1

Bake Pie Crust according to package direction. Cool.

Step 2

Reduce oven temperature to 325F.

Step 3

In large bowl, combine coconut, graham cracker crumbs, pecans and sugar.

Step 4

In another bowl, beat egg whites just until foamy. Add egg whites to the mixture, and mix well by hand. Mixture will be stiff. Optional: add 1/2 cup chocolate chips to the mixture or 1/2 cup raisins.

Step 5

Pour into prepared pie shell. Bake, uncovered, 25 to 35 minutes or until set. Do not overbake. Middle will be gooey.

You can top with sliced bananas and whipped cream. Makes 8 servings.
