PaPa’s Porridge (Bouillie)

In addition to being a great meal, this is also an old treatment for an upset stomach in Cajun Land.

Ingredients

  • 2 cups milk
  • 3/4 cup water
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 2 tsp flour

Directions

Step 1

Mix flour and water to make thin mixture. Heat the milk, sugar, and salt to scalding (not quite boiling). Slowly add flour and water mixture into milk. Stir over heat until thickened like a pudding. Remove and allow it to cool to allow the batter to thicken more.

Add a teaspoon of vanilla extract if you would like to use it for a cake or tart filling. It can be eaten as is for treatment for upset stomach along with bananas. Or use PET evaporated milk and when the Bouillie is near done add sponge cake that has been cut into small pieces and eat as a dessert.
