Oyster Stew

How do I love oysters , let me count the ways….This is one of them.

Ingredients

  • 3 tablespoon fresh bacon fat or butter 1 small onion
  • 2 tablespoon minced shallot
  • 2 pints oyster with liquer
  • 3 cups whole milk or half and half
  • 1/4 cup green onions
  • 1/4 cup chopped parsley
  • salt to taste
  • pinch of cayenne

Directions

Step 1

In a medium pot, melt the fat. When heated add the onion and shallot and saute just until the onion turns clear; do not brown.

Step 2

Add the milk and heat the mixture until almost boiling.

Step 3

Add the oyster, liquid, parsley and onion tops and cook until the oysters curl. Add salt to taste and a pinch of cayenne.

Step 4

Serve immediately.
