Mom’s Sweet Potato Casserole

Yams, a Cajun favorite, makes this popular classic dish. As a young girl we would enjoy this wonderful dish often during the holidays. Now, I make it for my family. One of their favorites!

Ingredients

  • 1 large can sweet potato or yams
  • 3 tbsp butter
  • 1/2 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp coconut flavor
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1 cup pecans, chopped
  • 1 cups crushed Wheaties cereal
  • 1 tsp cinnamon

Directions

Step 1

In a large bowl, mix the potatoes, butter, cinnamon, brown sugar, egg and vanilla and coconut flavorings.

Step 2

Pour into a casserole dish.

Step 3

Mix the brown sugar, butter, pecans, cinnamon and crushed Wheaties. Spread on top of the casserole.

Step 4

Bake at 350 degrees for 45 minutes.
