Lena’s Sweet Pickles

One of the better pickle recipes out there – the author of this recipe Ms. Lena said that this recipe was over 100 years old.
Time for soaking is not listed in the total preparation time.

Ingredients

  • 16 pounds of cucumbers
  • 1 cup pickling lime
  • 2 quarts red apple cider vinegar
  • 9 cups or 4 1/2 pounds of sugar
  • 3 teaspoons pickling spice
  • 1 teaspoon salt

Directions

Step 1

Wash and cut the ends of the cucumber Slice in sticks removing seeds

Step 2

Soak cucumbers in water with 1 cup pickling lime to 1 gallon of water for 24 hours

Step 3

Drain and rinse well

Step 4

Soak in cold, clear water for five hours

Step 5

Mix 2 quarts red apple cider vinegar with the 9 cups sugar, 3 teaspoons pickling spice and 1 teaspoon salt

Step 6

Soak cucumbers overnight in this mixture

Step 7

Simmer pickles until just warm - should take only about five minutes - do not let the mixture boil

Step 8

Place in sanitized jars and seal

Step 9

Process and hot water bath for 15 minutes

Step 10

Reduce sugar if you find them to sweet
