Lemon Supreme

When MawMaw read the title of the recipe she thought of the 1961’s hit of Trini Lopez – “Lemon Tree very pretty and the lemon flower is sweet but the fruit of the poor lemon is impossible to eat” -except in this very easy and versatile dessert.

Ingredients

  • 1 cup pecans, chopped
  • 1 cup flour
  • 1 stick oleo
  • 1 1/2 tbsp sugar
  • 8 oz cream cheese
  • 1 1/2 cup powdered sugar
  • 1 (9 oz) container Cool Whip
  • 1 can lemon pie filling

Directions

Step 1

Cream pecans, flour, margarine, and sugar together. Press into a 9x13-inch pan and bake 15 to 20 minutes at 350 degrees. Allow to cool.

Step 2

Mix cream cheese, powdered sugar, 3 tablespoons of Cool Whip, and spread over cooled crust.

Step 3

Put lemon filling on top of cream cheese filling and top with remaining cool whip. Refrigerate.

May also use cherry, blueberry pie filling or filling of choice. May also use 2 small packs Jello instant pudding of choice, instead of pie filling.
