Kumquat Bread

Kumquats are tiny fruits with a sweet to sour citrus flavor and a fully edible peel.
Kumquats are in season starting in October in South Louisiana.

Ingredients

  • 2 teaspoon baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 3 cups flour
  • 2/3 cup oil
  • 1 cup brown sugar
  • 4 eggs
  • 2/3 cups milk
  • 2 cups whole seeded kumquat preserves
  • 1 cup nuts

Directions

Step 1

Preheat oven to 350 degrees. Grease and lightly flour the pans you are using. Mix together flour, salt, soda and baking powder

Step 2

In a large bowl cream together, oil, brown sugar and eggs.

Step 3

Add milk and combine.

Step 4

Add the kumquats and nuts.

Step 5

Add the flour mixture to the wet ingredients and combine.

Step 6

Bake 350 degrees for one hour until toothpick comes out clean.
