John’s Quick and Easy Jalapeño Cornbread

A simple quick and easy cornbread for your favorite cornbread dressing or Steen’s syrup.

Ingredients

  • 1 package Jiffy Cornbread Mix
  • 2 eggs
  • 1/3 cup milk
  • 1/4 cup jalapeño peppers and a little juice
  • 1/2 cup cream style corn
  • 1 onion, grated or chopped
  • 8 slices Velvetta or cheddar cheese
  • 1/4 cup oil

Directions

Step 1

Combine all ingredients, but do not over-beat.

Step 2

Pour into a 9x9 pan that has been sprayed or oiled.

Step 3

Bake in oven at 350 degrees for 40 minutes or until done.
