Harvard Beets

I love beets; I could just serve them up as an appetizer.

Ingredients

  • 12 small beets cooked, sliced or cubed
  • 1/2 cup sugar
  • 1/2 tbsp cornstarch
  • 1/4 cup water
  • 1/4 cup vinegar
  • 2 tbsp butter

Directions

Step 1

Mix sugar and cornstarch in a medium pot. Add vinegar and water and boil 5 minutes.

Step 2

Add beets to the pot and let it stand for at least 30 minutes. Just before serving bring to a boiling point and add butter.
