Grillades for Grits

Grillards or Grillades is very popular meat dish and are served on grits or rice.

Ingredients

  • 1 pound beef round steak
  • 1 large onions minced
  • 3 tbsp oil or bacon fat
  • 2 cups boiling water
  • 1 bay leaf
  • 2 tbsp flour
  • 1 1/2 tsp salt
  • 1 tbsp chopped parsley
  • 1 sprig thyme
  • 1/2 can tomato paste (optional)
  • dash cayenne
  • 1/8 tsp pepper
  • carrots optional)
  • 2 tsp garlic powder

Directions

Step 1

Slice the round steak into long finger size strips.

Maw Maw likes to use a meat hammer to tenderize the meat.

Step 2

Fry meat in oil until brown and set aside. Add tomato paste, water, and seasonings. Cover, lower heat and simmer adding meat (and carrots, if desired), for 45 minutes,

Step 3

Tomatoes may be omitted if brown gravy is desired. For a thicker gravy, remove cover and cook down. Serve over grits or rice.
