Fig Cake IV – la gâteau de figue

Most people have had dried figs (especially in fig newtons!), but fresh figs are a real treat, especially when used in a fig cake – la gâteau de figue!

Ingredients

  • 1 1/2 cup sugar
  • 1 1/2 cup figs
  • 3 eggs
  • 1 stick butter
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 3 cups flour
  • 1 cup pecans optional
  • 1/2 cup raisins optional

Directions

Step 1

Cream eggs, sugar and butter. Add flour, one cup at a time. Blend in the baking powder, figs, nuts, raisins, and soda. Pour into a greased and floured 9x13 pan. Bake at cake temperature (350 to 400) for 45 minutes or until toothpick inserted in the center comes out clean. Mmm I can smell it now!
