Croquinoles (Kro-ce-yoils) Cajun Doughnut

One of the more popular classic Cajun sweet pastries. I can still smell the aroma wafting out the kitchen when these were cooking.

Ingredients

  • 1/2 cup margarine
  • 2 cups flour
  • 1/2 tsp vanilla
  • 1 tbsp milk
  • 1 tbsp baking powder
  • 1/4 cup sugar
  • 2 eggs
  • 1/8 tsp salt
  • Oil for deep frying
  • Powdered sugar for coating

Directions

Step 1

Beat margarine and sugar until light and fluffy. Add vanilla. Add one egg at a time, beating well after each. Add milk and mix well.

Step 2

Separately mix all dry ingredients and add to the egg mixture slowly, beating well.

Step 3

Place dough on a well-floured board. Roll dough very thin and cut by strips with a slit in each strip.

Step 4

Fry in hot oil until lightly brown on both sides. Drop fried croquinoles into a bag with powdered sugar and shake to coat.
