Croquinoles (Kro-ce-yoils) II

A fresh batch of Croquinoles (Kro-ce-yoils) can perk up a dreary November afternoon, especially with a nice hot pot of spiced tea or a cup of dark roasted coffee. Great breakfast food.

Ingredients

  • 3 eggs
  • I/2 cup sugar
  • 1 tablespoon butter, melted
  • 2 tablespoons water
  • 1 teaspoon baking powder
  • Approximately 3 cups of sifted flour, sufficient to make a stiff dough
  • 1 tablespoon vanilla
  • Powdered sugar
  • Cinnamon

Directions

Step 1

Beat eggs then add sugar, melted butter and water, mix well

Step 2

Add flour, baking powder and vanilla

Step 3

Roll out and cut into triangles about 3 inches long and 2 inches wide

Step 4

Use a sharp knife to add a slash to center then fry

Step 5

Sprinkle with powdered sugar and cinnamon to your liking
