Creamy Crawfish Au Gratin

A true Cajun classic. The flavor really is exceptional. This version is meant to be served over rice, pasta or puff pastry.

Ingredients

  • 1/2 cup butter
  • 1/2 cup flour
  • 2 cups heavy cream
  • 1 1/2 lb clean crawfish meat
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1 1/2 tsp cayenne pepper
  • 2 cups sharp cheddar cheese

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

In a skillet, melt butter and blend in flour to make a roux.

Step 3

Gradually add cream, stirring constantly, until mixture thickens. Add crawfish, salt, pepper, and cayenne. Heat thoroughly.

Step 4

Spoon mixture into a 2 quart casserole dish. Top with cheese and bake 20 minutes. Serve over rice or puff pastry.
