Crawfish Fettuccine

Fettuccine d’écrevisse – One of our more popular classics. Shrimp could be used instead of the crawfish or combined with crawfish along with crab meat.

Ingredients

  • 2 medium onions
  • 2 medium bell peppers, chopped
  • 2 sticks butter or margarine
  • 3 tbsp flour
  • 2 tbsp parsley
  • 2 cloves of garlic
  • 3/4 pound Velvetta cheese
  • 2 tbsp jalapeño peppers, chopped fine
  • 1 large can Pet evaporated milk
  • 1 1/2 pound crawfish
  • 1 pound Fettuccine noodles
  • Parmesan cheese
  • seasonings to taste

Directions

Step 1

Preheat oven to 350 degrees and cook pasta according to box directions.

Step 2

Season crawfish with your favorite Cajun spice or Season-All and set aside.

Step 3

Sauté onions and bell pepper in butter. Add the flour and cook for 15 minutes covered, but stirring often.

Step 4

Add parsley and cook 5 minutes. Add cheese, pepper, milk and minced garlic. Add the seasoned crawfish and cook 10 minutes.

Step 5

Add cooked pasta into the sauce and mix. Pour into an oven-safe casserole dish.

Step 6

Sprinkle with Parmesan cheese and bake at 350 degrees for 15 minutes.
