Corn Mockshoo I (Maque choux)

Ingredients

  • 1 dozen ears of corn
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 1/2 cup cooking oil
  • 1/2 bell pepper, chopped
  • 1/2 cup water

Directions

Step 1

Cut corn kernels off of corn cob. Scrape the milk off the cob also.

Step 2

Heat oil in a large pan, adding the corn after it's hot, stirring for one minute.

Step 3

Then add the onion, bell pepper and tomatoes into corn, stirring for another minute. Add water and let ingredients cook slowly over low-medium heat for 1/2 hour.
