Chocolate Banana Bread

This recipe is a popular “bread” in almost every culture, Cajun included. This recipe has a little lagniappe – Cocoa Chocolate and Chocolate Chip. A popular bread especially when bananas are going brown.

Ingredients

  • 1 cup flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1½ cup mashed ripe bananas (about 3)
  • ¼ cup cooled melted butter
  • ¼ cup canola oil
  • ¾ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ¾ cup chocolate chips divided
  • 1 cup chopped nuts optional

Directions

Step 1

Combine the flour, cocoa, soda and salt. Set aside

Step 2

In a separate bowl, combine the mashed bananas, 1/2 cup chocolate chips, butter, canola oil, brown sugar, vanilla and egg.

Step 3

Add the flour mixture and fold in. Do not over-beat

Step 4

Pour in well greased loaf pan

Step 5

Put ¼ cup chocolate chips over the batter and slightly push in with spoon

Step 6

Bake at 350 degrees for 1 hour in 9x5 well-greased loaf pan -

Step 7

Test with toothpick - it's clean - it's done

Step 8

Once baked, let cool at least 10 minutes
