Chicken a la Smithfield

A great chicken dish excellent for a dinner party.

Ingredients

  • 12 chicken breasts, skinned, halved and boned
  • 1 cup leftover roast
  • 2 cans cream of mushroom soup
  • 12 bacon slices
  • 1 cup sour cream
  • silvered almonds optional

Directions

Step 1

Wrap each breast with a piece of bacon. Cover bottom of flat baking dish (8x12) with the roast beef. Place chicken breast in pan.

Step 2

Mix undiluted soup and sour cream and pour over chicken.

Step 3

Heat oven to 250 degrees and bake uncovered 3 1/2 to 4 hours. To shorten baking time, heat to 275 degrees and cook 3 hours.

Step 4

Silvered almonds may be sprinkled on top.

Omit any salt. The bacon and soup add enough salt. The chicken breast may seem small, but this is a very rich dish and one breast is usually all one person can eat.
