Cheesy Potato, Spinach & Sausage Soup

Kasie writes, “This soup is a winner with my husband when he is sick or if it’s cold out. Rich, creamy soup that warms the soul. Yummy!”

Ingredients

  • 6 to 8 potatoes
  • 1 package shredded cheese, any flavor
  • 2 cans corn, drained
  • 1 package fresh sausage, your choice
  • 2 packages frozen spinach
  • seasonings of choice

Directions

Step 1

Place sausage in a medium saucepan and brown thoroughly. Cut into bite-sized pieces and set aside.

Step 2

Peel potatoes and place in a pot of water, with about 6 inches of water above the potatoes. Boil until tender.

Step 3

Once boiled, adjust water accordingly for a soup. When the potatoes are tender, pour in corn and cheese. Add seasonings to taste.

Step 4

Mix until cheese is melted. Soup should be getting thick at this point.

Step 5

Add the cooked sausage to the soup and cook about 10 minutes, so the flavors can blend together.

Step 6

Finally add the spinach, stir in until warm and well blended, then serve.
