Carrie Abshire’s Fresh Apple Cake

This is a recipe my mom used to make to take to work. It was really good, and she’d always have to make sure my sister and I didn’t eat it before she got it out of the door.

Ingredients

  • 4 cups peeled apple slices
  • 2 cups sugar
  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 2 tsp salt
  • 2 eggs
  • 3/4 cup oil
  • 2 tsp vanilla
  • 1 cup chopped pecans, optional

Directions

Step 1

Preheat your oven to 350 degrees. Mix apples and sugar together. Add all remaining dry ingredients and stir.

Step 2

Separately, in a bowl, mix eggs, oil and vanilla extract. Mix the dry and wet mixtures together.

Step 3

Stir in pecans and pour into a greased 13x9 inch pan. Bake for 50 minutes or until toothpick inserted comes out clean.
