Baked Eggplant

Eggplant is a close relative of the tomato, pepper and potato; favorite foods of most Cajuns. It is understandable that eggplants are a popular food item for them.

Ingredients

  • 3 cups eggplant, cooked and mashed
  • 1 tbsp butter
  • 2 eggs, slightly beaten
  • 1 cup milk
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 cup cheese
  • 1 tbsp bell pepper
  • 1 tbsp onion, chopped fine
  • Bread crumbs for topping.

Directions

Step 1

In a large mixing bowl, mix all ingredients unless doing layers.

Step 2

Pour all into an 8x8 baking dish. Alternatively, you can layer eggplant, then cheese repeating the layers. Top with bread crumbs.

Step 3

Bake about 15 minutes in 350 degree oven or until all cheese is melted.
