Ingredients

  • 1 link of hot smoked sausage
  • 2 cans chili (pinto) beans
  • 1 beef bouillon cube
  • 1/2 cup hot water
  • 1 tbsp butter
  • 1 tbsp garlic, minced
  • 1/2 tsp Tony Chachere's
  • 1 tsp onion & garlic powder
  • 1 tbsp oil
  • 1 tsp Worcestershire sauce
  • Tabasco Hot Sauce to taste

Step-by-Step Instructions

  1. Heat up a medium pot. In one tablespoon of oil, pan fry sausage pieces until brown. Once they are done, take them out and set aside.
  2. Melt butter in your pot and saute’ garlic until it begins to brown. While the garlic is browning, dissolve the beef bouillon cube in 1/2 cup of hot water. Be careful not to burn the garlic!
  3. Then add 2 cans of beans, the beef bouillon and water, and the rest of the dry seasonings. Stir gently. Add in the Worcestershire sauce and the Tabasco Hot Sauce to taste. Let it boil for 5 - 7 minutes.
  4. Lastly, return sausages to the pot and heat through.

A: Garlic browns very quickly once the butter is hot. Keep the heat at medium and watch it closely - it should be fragrant and just beginning to brown, not dark. Have your bouillon water ready to add as soon as the garlic starts to color.

Q: Can I use dried beans instead of canned?

A: Yes, but you'll need to cook them first until tender. Use about 3-4 cups cooked pinto beans and reduce the added liquid slightly since canned beans have more liquid than home-cooked.
