Yam Casserole with Crunchy Topping

Ingredients

  • 3 cups cooked mashed yams
  • 2 eggs, beaten
  • 1/2 stick melted butter
  • 1 1/2 tsp vanilla
  • 1/3 cup all purpose flour
  • 1/3 stick butter
  • 1/2 cup white sugar
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1 cup chopped nuts

Directions

Step 1

Combine yams, white sugar, eggs, salt and half a stick of butter. Add milk and vanilla. Mix well. Spoon into a buttered 1 ½ quart casserole dish.

Step 2

In a separate bowl, combine the brown sugar, flour, nuts and 1/3 stick butter. Spread this on top of the yams.

Step 3

Bake at 350 degrees for 35 minutes or until set.
