Vee’s twist on classic meatloaf uses seasoned croutons for breadcrumbs and gets topped with bacon strips for extra flavor. Optional jalapenos, Worcestershire, and horseradish add a Cajun kick to this family favorite.

Ingredients

  • 1 lb ground round
  • 1 bell pepper, chopped
  • 1-2 cups seasoned salad croutons (see directions)
  • 2 tsp salt
  • 1 egg
  • 1 onion, chopped fine
  • 1/4 tsp cayenne pepper
  • 1/2 cup milk
  • 6 oz sliced bacon
  • 3 jalapenos, diced (optional)
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tbsp horseradish (optional)

Step-by-Step Instructions

  1. Preheat oven to 350°F.
  2. Using seasoned salad croutons, crumble to form ¾ cup of breadcrumbs.
  3. In a large bowl, mix all the ingredients together (jalapenos, Worcestershire and horseradish optional). Shape into a loaf and cover the top and sides of the loaf with bacon slices.
  4. In a shallow baking pan, bake at 350°F for 45 minutes or until the internal temperature reaches 160°F and the bacon is crispy.
