My crockpot is being used more and more, I love how easy it is. This beef roast with ranch, brown gravy, and Italian dressing mix creates the most tender, flavorful pot roast with minimal effort. Add carrots, potatoes, and onions halfway through for a complete one-pot meal that’s perfect for busy weeknights.

Ingredients

6 servings
  • 1 beef roast, any kind, sized to fit your crockpot
  • 1/2 package Hidden Valley ranch dressing mix
  • 1/2 package brown gravy mix
  • 1/2 package Italian Dressing Mix
  • 1/4 cup water (or more)
  • Optional

Step-by-Step Instructions

  1. Place roast in crockpot. Mix all 3 mixes together and sprinkle on top of roast. Pour water in bottom of crockpot, cook on low, 6 or 7 hours.
  2. Halfway through cook time (around 3-3.5 hours) you can add carrots, potatoes and onions for a whole meal. Serve over rice.

Common Problems and Solutions

Q: Why is my roast tough?

A: Make sure you're cooking on low for the full 6-7 hours. Slow cookers need that long, gentle heat to break down the connective tissue in the beef. If you try to rush it on high, it won't be as tender.

Q: Can I add the vegetables at the beginning?

A: You can, but they may get mushy. Adding them halfway through ensures they cook through without falling apart, giving you nice tender vegetables with some texture left.

Tips and Techniques

For extra flavor, sear the roast in a hot skillet for 2-3 minutes per side before placing in the crockpot. The browned crust adds depth to the final dish. Also, if the gravy seems thin at the end, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the liquid, then let it cook another 15 minutes.
