Tipsy Peaches
Great topping idea for ice cream featuring fresh peaches simmered in butter, brown sugar, vanilla, and brandy. Recipe can be doubled and frozen for later use.

Ingredients

4 servings servings
  • 1 tablespoon butter
  • 4 cups sliced fresh peaches
  • 2 tablespoons brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 (1.5 fluid ounce) jigger brandy

Step-by-Step Instructions

  1. Melt butter in a skillet over medium heat.
  2. Add the peaches, and cook for about 10 minutes, stirring occasionally.
  3. Mix in brown sugar, vanilla and brandy; simmer over medium heat for about 20 minutes or until peaches are soft and sauce has darkened.
  4. Serve warm over vanilla ice cream or your favorite flavor.
  5. To freeze: Allow to cool completely, then freeze in an airtight container. To reheat, thaw, separate peaches from juices. Reheat juice in a skillet to thicken; add back the peaches and warm through.

Tips and Techniques

Use ripe but firm peaches for the best texture. If peaches are very ripe, reduce cooking time to prevent them from becoming mushy.
