South (Holly) Beach Pumpkin Pie Shake
A friend of mine who worked for one of the large juice & shake companies in the West told me the key ingredients to their seasonal pumpkin pie shakes. This low-carb version uses pumpkin, pumpkin pie spice, Splenda, soy milk, and vanilla frozen yogurt for a healthy after-workout treat that’s ready in 5 minutes.

Ingredients

  • 4 heaping tbsp canned pumpkin
  • 1 tsp pumpkin pie spice
  • 1 tbsp granulated Splenda
  • 1 cup soy milk, unsweetened
  • 1 cup low-carb vanilla frozen yogurt or ice cream

Step-by-Step Instructions

  1. Throw all of the above into a blender or food processor and blend until smooth. Enjoy immediately!

Tips and Techniques

For a thicker shake, use less soy milk or add a few ice cubes. You can also freeze the shake mixture in ice cube trays and blend them later for an instant treat.
