Delicious, easy to prepare and “gud”. This recipe is an adaptation from Fast and Fresh made with three Cajun favorites - Shrimp - String Beans - Tomatoes..Oh wait there is a fourth favorite - Pasta. We love linguine for this recipe, and it’s ready in about 45 minutes with a bright lemony finish.

Ingredients

  • 1 pound cleaned shrimp
  • 1/2 pound fresh or frozen string beans tips removed
  • 3 tablespoon olive oil
  • 3 medium fresh tomatoes cut in wedges
  • 1 teaspoon lemon rind
  • 2 tablespoon lemon juice
  • 1 tablespoon capers drained
  • 4 cups cooked pasta
  • 1 tsp garlic granules/powder optional
  • 1 teaspoon Cajun blend seasoning

Step-by-Step Instructions

  1. Rinse shrimp and pat dry with paper towel and set aside. Prepare your favorite pasta according to package directions (linguine works great).
  2. After tipping the string beans, add the beans and one tablespoon olive oil in a large skillet and cook on medium heat for five minutes, stirring occasionally.
  3. Add the shrimp and cook for an additional three minutes, stirring frequently, until shrimp turn pink.
  4. Add the tomatoes and cook for another minute until they just start to soften.
  5. Add the garlic powder and Cajun seasoning, stirring to coat everything evenly.
  6. For the sauce, whisk together the remaining two tablespoons of oil, lemon rind, lemon juice and the capers. Pour over shrimp mixture and toss to combine.
  7. Serve immediately over the cooked pasta.
