Sawdust Pie
This pie is more traditional Kentucky but several Cajuns have taken a liking to it. Granmere would be real proud of this one. Try adding a half cup of raisins or chocolate chips for a nice difference.

Ingredients

8 servings
  • 1 (9 inch) pie crust
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups shredded coconut
  • 1 1/2 cups sugar
  • 1 1/2 cups graham cracker crumbs
  • 1 cup egg whites

Step-by-Step Instructions

  1. Bake pie crust according to package directions until lightly golden. Cool completely.
  2. Reduce oven temperature to 325F.
  3. In large bowl, combine coconut, graham cracker crumbs, pecans and sugar.
  4. In another bowl, beat egg whites just until foamy (not stiff peaks). Add egg whites to the dry mixture, and mix well by hand. Mixture will be stiff. Optional at this point - add 1/2 cup chocolate chips or 1/2 cup raisins to the mixture.
  5. Pour mixture into prepared pie shell, spreading evenly. Bake uncovered 25 to 35 minutes or until set and lightly golden on top. Do not overbake - the middle will still be slightly gooey when done. Cool completely before slicing. You can top with sliced bananas and whipped cream if desired. Makes 8 servings.

Q: Why is my pie too dry?

A: Don't overbake - the center should still be slightly gooey when you remove it from the oven. It will firm up as it cools. Also make sure your egg whites are just foamy, not beaten to stiff peaks.

Tips and Techniques

Let the pie cool completely before slicing or it will fall apart. The texture improves after a few hours or even overnight.
