Red Hot Cinnamon Candied Yams
Ingredients
- 1 - 29 oz can sweet potatoes
- 2 teaspoon butter
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup cinnamon red hots
- 1 cup marshmallows
Step-by-Step Instructions
- Preheat oven to 325 degrees Fahrenheit.
- Drain 1/2 of the juice from the can of sweet potatoes and discard. Place the sweet potatoes and remaining juice in a buttered casserole dish. Dot with butter.
- Mix the brown sugar and cinnamon together and sprinkle on top.
- Sprinkle with the red hot candies and cover with marshmallows.
- Cover loosely with foil and bake for 20-25 minutes at 325 degrees Fahrenheit until marshmallows are golden and candies have melted. Yummy!
Tips and Techniques
Watch the marshmallows during the last few minutes of baking - they can go from perfectly golden to burnt quickly. If you want extra cinnamon flavor, let the red hots melt completely before adding the marshmallow topping, then broil for 1-2 minutes to toast.
